Chewy Chocolate Chunk Cookies

Even if you’ve never baked cookies in your life, you’ll get these ones perfect. Good cookies, good times…

Chewy Chocolate Chunk CookiesA lot of people default to, “I love to cook, but I hardly bake.” And that’s fine. Baking does take a little more science and strict adherence to recipes. But these super chewy cookies are almost impossible to screw up, so you’ll be safe going down this road. The only question is how many for you and how many for someone else?


9 tablespoons unsalted butter, softened

2 tablespoons honey

1 cup dark brown sugar

1 large egg

1 cup all-purpose flour

3/4 cup whole wheat flour

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

5 ounces semi-sweet dark chocolate, roughly chopped


Preheat your oven to 350˚F (180˚ C) and find three bowls of decent size

In the first bowl (this should be the largest bowl), mix together the flours, baking soda, baking powder and salt

In the second bowl, mix together the brown sugar and butter until evenly blended and smooth

In the third bowl, stir the honey, egg and vanilla until well mixed – then pour it into the sugar and butter and combine everything together

Pour the wet mixture into the first bowl of flours etc. and stir until combined evenly

Add the chocolate chunks and mix them in roughly

POP THE DOUGH IN THE FRIDGE FOR AT LEAST 15 MINUTES – Don’t skip this step! It’s crucial.

Line two baking sheets with parchment paper

Spoon out golf ball-sized balls of dough and arrange evenly on the parchment; leave about two inches between each dough ball

Put into preheated oven for 10 minutes

Remove from oven and let cool on the baking tray for at least 10 minutes, then transfer them to cooling racks or start shoving them into your face immediately (your call)
